Ingredients

1 kg of catfish
2 liters of water
1 tsp salt
1 lemon / lime
1 stalk lemongrass
5 bay leaves
galangal
20 pieces cayenne pepper
basil
ground spices :
20 pieces of red pepper
8 siungbawang white
shrimp paste
5 spring onions
5 pieces kandis acid
5 cm segment of turmeric
3 cm ginger
salt + brown sugar (to taste)
Step
Rinse the fish. Soak in the juice of 1/2 lemon and salt 1sdt it for at least 5 minutes so that the fishy smell and mucus is lost. Wash again with clean water.

Boil water. Enter the bay leaves, galangal, tamarind kandis, lemongrass. If boiling enter the spice paste. Correction taste.

Enter the fish, cayenne pepper and lemon juice. When the fish is almost cooked enter basil leaves. No need to be stirred so that the fish are not destroyed. Benar2 cook until wilted basil leaves and mature so pindang not perishable.
